Buffalo Superbowl Sandwiches!

With the Superbowl only a few days away I thought I’d share this quick, easy, delicious sandwich idea with you.  It’s a Rachael Ray 30-minute meal that I’ve been making for years but I never thought to make it for Superbowl until now. This is one of those recipes that you have carte-blanch.  It is very flexible so if you don’t have one ingredient you can use something else.  It can also be embellished with almost anything in your fridge.  It’s perfect!!


To start take your chicken breasts and season them well with chili powder, paprika, salt and pepper.  OR.. whatever your heart desires.  I used Lawry’s season salt, pepper and a Cajun seasoning blend this time because that’s what I had on hand.  Really anything hot and spicy would work ( think buffalo! ).  Then take out your big fry pan and get it nice and hot.  Add olive oil to lightly coat the bottom of the pan and toss in a pad or two of butter.  Now get the chicken working, you want a nice seer on the outside so it will stay juicy inside. When the chicken is done remove it to a plate and let it hang out while you assemble the rest of the ingredients.


Because this is a buffalo chicken sandwich you need to make up the sauce just as you would if your were making wings.  Take  2 tablespoons of butter and melt it in the microwave along with 1/2 cup of cayenne pepper sauce.  Now here you have come to a crossroad.  You can either do like Rachael does and place your entire chicken breast into the bowl with the hot sauce letting it soak up all that yummy goodness OR… you can drizzle it on top of the chicken when you build your sandwich.  There is no wrong road taken here… whatever your heart desires.


I went wild and combined hot sauce with hot chili sauce!!  Whoa Baby!!

One more thing you need to take care of before you are ready to build this wonderful creation.  Blue Cheese dressing!   What would  Buffalo Chicken anything be without Blue Cheese dressing?  Nothing!!  Of course you can buy a very good ready-made blue cheese dressing in a bottle or you can make your own.  It’s totally up to you and what kind of mood you are in.  If you want to get fancy make it yourself.  Mix 2 cups of sour cream, 1/2 lb. blue cheese crumbles and 4 scallions thinly sliced together in a bowl. OR….take some ranch dressing, put it in a bowl and toss in a big handful or two of blue cheese crumbles.  See what I mean about choices?  Whatever your heart desires, Or whatever is in your fridge!


Grab a big old hard roll, Portuguese roll, hamburger bun, chunk a Italian bread, OR… if you want you could even make these into little buffalo chicken sliders!  In that case you need to grab some of  those little dinner rolls. But what ever bread you chose you must warm it up in the oven for a few minutes.  You just have to have crusty on the outside, soft on the inside, warm and toasty all over.  There is no OR…here.  This is a RULE because I like my bread and rolls warm from the oven so I’m pretty sure you will too.

While you’re at it finely shred some lettuce and put it aside for later. OR… make up some coleslaw, that would be killer on top of this. Slice up some red onion too, OR yellow onion, OR more of those scallions, whatever your heart desires. Maybe some tomato? Nah, skip the tomato.


Tip: Soak your raw red onion in ice water.  It takes out the “bite”.

Ok, so you now have everything assembled to build your sandwich.  Spicy chicken breasts that have been hanging out in your hot sauce or not. check. Hot sauce. check. Blue Cheese dressing. check. Warm crusty rolls. check. Endless topping possibilities. check.  Good, now the fun part.  Let’s make that sandwich!!


Take your roll of choice, top with chicken, if you did not go with option A and soak your chicken in the hot sauce then here you want to liberally drizzle that hot sauce all over the top of your chicken.  Next put a huge dollop of blue cheese dressing on top. Then a handful of that finely shredded lettuce, and/or a giant spoonful of coleslaw.  Some sliced red onions next, maybe a tad more hot sauce and a little more blue cheese dressing, more lettuce?  Heck the sky is the limit!!  Go for It!! Then…and then…just stand back and take a good look at your lovely creation. Eat half OR… eat the whole dang thing while nobody is looking and while you get a big platter of these ready for everyone sitting in front of the TV right about now waiting for the best part of Superbowl…..The Commercials!!!!  Serve it with some celery sticks OR…carrots sticks OR…both!!


Oh and don’t forget the napkins!!
