Homemade Granola and Granola Cookies

I was going through my cookbook the other day and I came across a recipe for granola.  I used to make it all the time, putting it on everything because this recipe is the best and it makes a ton.  Ice-cream, yogurt, cereal, puddings!  I even use it to make my granola cookies.

  • 10 cups of old-fashioned rolled oats
  • 2 cups of coconut
  • 1 cup of wheat germ
  • 1 cup of powdered milk
  • 1 cup flax seed
  • 1 cup of sunflower seeds
  • 1 1/2 cups almonds – chopped, sliced or slivered

Mix all of the above ingredients together in a big bowl.

Dressing

  • 3/4 of honey
  • 1/3 cup of canola oil
  • 2/3 cup of cold water
  • 1 teaspoon of vanilla

Mix dressing and pour over granola, stirring to coat well.  Place in a large shallow pan and bake at 300 degrees for about 1 hour, stirring every 15 minutes or so until done.  The longer you bake it the crunchier it will be.  I like mine more on the chewy side so I take mine out of the oven after about 50 minutes.  After it cools stir in your choice of dried fruits.  One of the things I love about making my own granola is that I can throw in whatever I feel like or happen to have on hand that day.  Cranberries, raisins, dates, apricots, walnuts, pecans…anything, everything!

Now that you have all that yummy granola lets use it to make my Granola Cookies:

  • 1 cup of shortening
  • 1 cup each of brown sugar and granulated sugar
  • 2 eggs
  • 1 teaspoon of vanilla
  • 2 cups of flour
  • 1 teaspoon of baking soda
  • 1/2 teaspoon each of salt and baking powder
  • 1 cup of rolled oats
  • 1 cup of granola
  • 1- 6 ounce package of chocolate chips

In a large bowl with an electric mixer, cream the shortening with the sugars.  Add eggs and vanilla and beat until well blended.  Stir in the flour, baking soda, salt, baking powder and oats.  Add the granola and chocolate chips mixing to combine.  Spoon onto parchment lined cookie sheet and bake at 350 degrees for 8-10 minutes.

When I make these cookies I use a very generous size spoonful and I take them out of the oven sooner then later.  I like these soft and chewy, but if you prefer a crisp cookie leave them in longer.
