Today is a special occasion at the compound. Our son that was away in basic training with the army just came home. He turned 20 in August but for him it was just another day doing drills, running miles and having target practice.
So the family has gathered here today for a belated birthday and welcome home celebration. I made his favorite cake. Yellow cake with peanut butter frosting. It seems to be a family tradition, my most requested birthday cake. The cake itself may change from vanilla to chocolate but the frosting always remains the same. Gotta have that peanut butter!
Peanut Butter Frosting
- 6 ounces of cream cheese, softened
- 2/3 cup of peanut butter
- 1/4 cup of milk
- 1 tsp. vanilla
- 3 cups of confectioners sugar
In a large mixing bowl combine cream cheese and peanut butter mixing until smooth. Add the vanilla and mix. Now add the other ingredients alternating between confectioners sugar and milk starting and ending with the sugar. Mix until smooth and creamy. Frost cake and store in refrigerator.
Do not try to make a layer cake with this frosting though people because it is just too creamy. When your back is turned those beautiful layers you just frosted will slide apart and fall on the floor. Don’t ask me how I know this, just trust me here. I use it just for a pan cake, like a 9×13, or cupcakes.

I am a slob. A big unorganized slob. Ironically when my two oldest got married I made them each a recipe book filled with family traditions using the prettiest recipe cards complete with stickers and fancy borders. It was a masterpiece! Several years ago for Christmas my daughter returned the favor and organized all my recipes for me into a beautiful book of my own. For about a month I tore my house apart wondering what on earth happened to my recipe box! It was the holiday season for goodness sake and I needed my recipes!! I know I’m unorganized but how could I misplace a whole recipe box? That year for Christmas I got my beautiful recipe book and my empty recipe box! What a relief! I was not losing my mind. Anyway, as I said that was several years ago now and that beautiful book now looks like this….
