Zucchini Squares

When the zucchini starts to take over my garden I look for ways to use it in everything. One of our favorites is Zucchini Squares. They are made with fresh parmesan cheese, lots of eggs, and pepperoni. In our house anything with pepperoni is always a hit.

Zucchini Squares
3 Cups shredded zucchini
1/2 cup chopped onion
1 1/2 cups Bisquick
3/4 cup parmesan cheese
1/2 tsp. salt, dash of pepper
1/4 tsp. garlic powder
2 Tbsp. dried parsley
1/2 tsp. dried oregano
6 eggs, slightly beaten
3/4 cup vegetable oil
1 cup sliced pepperoni cut into halves

Mix all ingredients together, pour into greased 9×13 pan. Bake at 350 degrees for 25 mins or until golden brown.

Whatever you do, and this is really important here folks….Do NOT go outside to eat lunch and then take a quick dip in the pool. And then Do NOT take a walk to the coop to check on the girls and start pulling weeds in the garden. Because if you do…..

I tried this recipe last night after picking up a bunch of farm fresh zucchini, yes believe it or not I can cook and I enjoy new recipes, any-hoo , I made one with pepperoni and one with fresh hot sausage with fennel I purchased the meat at The Meat Store It is a wonderful butcher shop on Broad Street in Meriden. Its on the side of the OLD Sound of Music Building. yeah the place we used to wait in line for Concert tickets!!!!! Back to the Meat Store it is run by a couple of local fellows who know their meats and its top quality stuff that they will cut to order
